It binds to fat sources, so you can combine it with ingredients such as butter, olive oil, crème fraiche, eggs, and mayonnaise to create dressings, sauces, dips, and so much more. Made from a blend of Oregon Blue, Crater Lake Blue, Oregonzola, and Rogue's special reserve blue cheeses, all aged a minimum of 90 days
