This is a delicious gouda with a smooth, creamy bite. Gouda is rarely made from sheep’s milk; this special and rare cheese is smooth and nutty. Overtones of brown butter make it addictive. Jacob Rispens and his herd of 300 Lacaune sheep live in the quiet town of Morra in the Netherlands. Serve shaved over roasted vegetables or topped with fruit preserves and a glass of crisp Chardonnay.
