Farmhouse cheese made from raw milk of hay-fed Salers cows. Harvested November 15 - April 15. Not to be confused with it's pasteurized copy, Cantal Latier, or summer harvested Salers Cheese. Semi-soft cylinder shaped cheese. Aged several months with a strong tangy butter taste that grows with age. 45% butterfat.
