Mussels with Kombu
In addition to fresh, diver-caught Kombu, the mussels that make it to these conservas are sustainably caught and swiftly preserved, ensuring they are in the best possible condition when they’re hand-arranged into these tins. The sweet kombu adds a gently earthy, smoky sweetness to the wonderfully plump and brisk character of the mussels. Of course, this is a fantastic starting point for a conserva board, but it can also be an excellent baseline for a pasta sauce, as well.
