This is not your average chicken parm. Built on soft Amoroso bread, it features a gluten-free breaded chicken cutlet smothered in San Marzano tomato sauce, layered with Capella’s handmade mozzarella, a touch of Parmesan, fresh basil, and a house-made oregano mayo. It's comfort food at its finest, served with a side and a whole lot of love.

B&B Chicken Parm Sandwich with Capella Fresh Mozzarella

Recipe by Chef Shaun Doty of Bantam & Biddy, Atlanta

Serves 4

Ingredients:

• 4 boneless, skinless chicken breasts

• 1 cup gluten-free breadcrumbs

• 1 cup all-purpose flour (or GF flour, optional)

• 2 large eggs, beaten

• Salt and freshly ground pepper

• 1 cup San Marzano tomato sauce

• 8 oz Capella fresh mozzarella, sliced

• ½ cup grated Parmesan cheese

• ¼ cup oregano mayonnaise (see below)

• ½ cup fresh basil leaves

• 4 Amoroso-style sandwich rolls

• Olive oil, for frying

 


 

For the Oregano Mayo:

• ½ cup mayonnaise

• 1 tsp dried oregano

• 1 tsp lemon juice

• Salt and pepper to taste

Mix all ingredients in a small bowl and chill until ready to use.

 


 

Instructions:

1. Prepare the Chicken: Pound the chicken breasts to ½-inch thickness. Season with salt and pepper. Dredge in flour (optional), dip in egg, and coat with gluten-free breadcrumbs.

2. Fry: Heat a few tablespoons of olive oil in a skillet over medium heat. Cook chicken until golden brown and fully cooked, about 4–5 minutes per side.

3. Melt the Cheese: Preheat broiler. Spoon tomato sauce over each cutlet, then top with Capella mozzarella and a sprinkle of Parmesan. Broil for 1–2 minutes, until cheese is bubbly and melted.

4. Assemble the Sandwich: Toast the Amoroso rolls if desired. Spread oregano mayo on both sides, layer with the cheesy chicken, and top with fresh basil. Add extra sauce if you like it saucy.

5. Serve: Plate with a side of your choice—fries, salad, or pickles—and enjoy every bite.
