The name means simply, cheese from the Alps, made near the Swiss and Austria border, the dairy is over a mile high. The cheese is only made in the months when the cows are grazing on natural mountain pastures of wildflowers, herbs, and natural grasses. These flavors are expressed through the cheese. Great as a table cheese, it can be melted for warmed sandwiches and even fondue. Made on a family farm that raises around 100 cows for their cheese production.
