Made at the Parra Family farm in La Mancha Spain from organic thermized sheep's milk. This Manchego is made from the family's herd of Black Manchega Sheep, the breed that originated Manchego. Half the Black sheep in Spain live on this farm. The farm is completely organic and biodynamic, and the cheese is handmade, exclusively by women, and not waxed like most commercially produced Manchego. With sweet herbal notes and a rich butteriness , Manchego is Spain's most famous cheese, and we believe this is the best of all of them. The Parra Family are also the largest grower of organic garlic in Europe, they supply Capella with our black garlic that we make our Black Garlic Crackers from.
