Giorgio Cravero’s family has selected and aged Parmigiano-Reggiano in Bra, Italy since 1855. While Parmigiano-Reggiano production is controlled by a strict PDO, there’s nothing in the rules that says a maker can’t try to do better. Giorgio works with farmers who only use forage from their own land. He believes the difference in locale makes for a significant difference in flavor from one cheese to another. All the cows live on high fields, 700 meters above sea level. The mountain pastures have more diverse grasses and flowers than low-lying lands. The main cheesemaker Massimo makes eight wheels of cheese every day and tends to them himself. His cheese has been awarded the rare designation Prodotto di Montagna, for cheese made of milk from animals raised in the mountains on a diet of local forage. Each wheel is aged for a minimum of 18 months and hand-selected for Capella Cheese.

Best shopping experience !!!

I’ve ordered Cravero Parmesan cheese online in the past and purchased it in retail boutique food markets. While shipping costs were high I also felt the cheese was worth it. Going online I saw capella cheese and saw they offered free shipping and so I called to ask about some other cheeses as well. The founder Raymond Hook answered the phone and was the nicest person. He advised me to get 2 one lb pieces wrapped separately as I explained I preferred the cheese to be softer and sliceable. He also recommended a wonderful cheese to try as this would also give me free 2 day dry ice shipping. I was blown away when I received my order. Unlike other establishments that precut one lb slices to reflect the one lb price each cheese was much more than a generous lb. The cheese was also the freshest I’ve ever had. Instead of a large rind with softer slice chunk each piece had a small rind and a thick slice. As I have to maintain high calcium intake I find myself breaking or cutting 1-2 ounce slices/chunks several times a day and continue to be amazed at how wonderful this cheese is. Especially as this is the first time I’ve experienced it so much softer than the usual grating firmness I usually bought. Within two weeks I was back to ordering more.
