Fontina Gold
This is the most well-known Valle d’Aosta cheese that is used in recipes for fondues from this area. The milk is from indigenous, black and brown patched cows that are from alpine pasture productions, and those safeguarding the artisan traditions. Is a raw full-fat milk fontina aged a minimum of 9 months (3 times more than a normal fontina). This cheese is compact, yellow-hued, with an intense flavor and traces of hay on the finish.
