At Capella Cheese, we absolutely love Swiss Cheese! There is such a variety produced, including: Fondue, Raclette, Gruyere, to the famous Swiss with holes called Emmentaler – we love them all. 

Swiss cheese is crafted in many shapes and sizes, from small 150 gram soft ripened cheese to massive 200 pound wheels of Alp cheese. They are also made in brick shaped blues as well as small cylinders of truffled triple creams. 

Alpine cheese is by far what the Swiss are best known for, with Gruyere being the most famous alpine cheese. The Gruyere AOP Surchoix was “Best of Show” winner, for the 3rd time this year - what an outstanding accomplishment.

L'Etivaz

From Alp Tompey, 2020, The cheese is made over an open fire from milk of cows who graze mountain pastures.

Aged: over 3 years 


 

Gruyere AOP Surchoix

Handcrafted by Michael Speycher and aged by Gourmino. Each wheel is a massive 70 pounds. This cheese is certified an AOP cheese, which guarantees the highest standards in terms of origin, processes and quality. This selection was awarded 2022 “Best of Show” at The World Cheese Awards. It has beautiful fresh flavor, including delicate mountain flowers and alpine herbs.

Emmentaler

The maker of this cheese is the only producer of Emmentaler who is designated by Slow Foods, making it a very unique cheese. Milk is from a single dairy. The flavors are sweet, tangy, melty, with a cream finish.

Gourmino Goat

Made in the picturesque village of Combremont-le-Petit in the western Swiss Alps. This cheese has mineral forward flavors, and is wonderfully capricious with its soft yet slightly crumbly texture and tiny salt crystals.

Aged: 9 months 


Blue de Combremont 

A double cream blue cheese brick from western Switzerland, creamy rich, mildly blue, slightly peppery.

Aged: 3 months
 

Moser Screamer

A triple cream, small format, 150 gm cheese from Uli Moser. Its flavors are rich, creamy, and buttery.

Aged: 1 month

Moser Truffle

A small format triple cream with a layer of black truffle moose in the center. Its flavors are rich and buttery with the earthiness of fresh truffles.
