Cheshire is one of England’s oldest named cheeses, and thousands of farms once produced it before mechanized production took over in the 1900s. The Appleby family has kept this historic method alive by aging their cloth-bound wheels on wood for three months in old farm barns. The day-to-day operations are run by the third generation, Paul and Sarah Appleby.
