La Jeune Autize
This cheese is produced in the Vendée region and its name is the same as a branch of the local river named Autize. It is made in the style of a Morbier cheese from the Jura region. It has the double feature for a goat cheese, to have the form of a tomme and present a thin layer of charcoal in the center. Disc with a white dough and an orange rind. Nowadays, the fine ash layer which characterizes this cheese is only decorative. Mild and fresh, gently nutty with a hint of mushroom.
