On my third visit to Capella, I placed an order for several 1 lb blocks of some new-found favorites. The Vielle Mimolette is one of those: a firm cheese, very subtle in the mouth, reminiscent of a Dry Jack with a beautiful orange-the-fruit orange color. Worked well a chardonnay, and almost as well with a robust Zinfandel. I'd nibble it, rather that putting it with bread or wafer.
It does not get any better than this……

Fantastic cheese. It is cold-smoked with other hints of honey, apple, nectarine and the bite of the blue. It results in a delicious mixture of a smoked, spicy and sweet fusion. Highly recommended. Very good with Cabernet

I have been receiving shipments of cheese for the last several months and have enjoyed this immensely. The selections are always interesting, things I have not tried before and delicious. I've shared with my friends and family all of whom have enjoyed. Tonight we're hosting a dinner party and featuring the January selection on a charcuterie board. Gave the husband Cheese of the Month club for Christmas, after listening to him bellyache how bland and tasteless grocery store offerings have been lately. We just got our first shipment. Divine! Oh my gosh, even with as sweet a tooth as I possess, I’d much rather be gomping down on these tasty, delicious pieces of heaven, with a dab of the fig spread they sent, than any sweet I can think off. Rich, savory, satisfying. I was a little hesitant because of the price, but the quality and enjoyment are well worth it. Looking forward to future monthly selections!
I stumbled upon this place when I was picking up my Thanksgiving catering from Fox Bros, and WOW. I got a small selection of cheeses and every single one was a winner. Truly felt like I was back in a European local cheese shop and I couldn’t go wrong. Decided to send one of their boxed sets as a Christmas gift to my fellow local cheese lover, and they are blown away as well. I was very happy to find this organic manchego cheese! Seems to be a rare commodity. The cheese is aged but not dry. Delicious!
