
A lovely small format tomette of mixed goat and sheep milk. It is savory but not pungent , with notes of brown butter, light broth, toasted wheat bread and a slight minerality from the goats milk. The cheese has a very clean flavor, it is a great cheese for cheese and charcuterie boards.
