The name ‘Scamorza’ derives from the word “decapitate’ and refers to the cutting up of the stringy paste into small portions, and in this case, the final shape is of a pig. The flavor is sweet and milky with traces of smoke. The cheese is compact and elastic. Pairs well white wines, beer and lager, as well as red tomato conserve and Ciabatta bread.
