10 year is the best! It goes with sandwiches and bread in the morning. Absolutely love and have bought over and over.

We loved the Gruyere AOP. This cheese is full of flavor. It is an excellent cheese to serve as part of a cheese board offering.
First time I tried this cheese was as part of a Cheese Club delivery and I got hooked, and have ordered this at least 2 times more since then.
The salty nand tangy cheese matches perfectly with the sweetness of the grapes - it's a whole cheese board in itself!

This is, quite possibly, my favorite cheese in the world - and I had some trepidation about how switching to pasteurized milk and the aged monks being replaced by apprentices would effect the product.
I am happy to say that my palate did not discern any drop off in quality or flavor. It must be the grazing of the sheep and the biome of the aging cellars that make this cheese so special.
Will certainly purchase again and again. Pair it with very good Pinot Noir

On my third visit to Capella, I placed an order for several 1 lb blocks of some new-found favorites. The Vielle Mimolette is one of those: a firm cheese, very subtle in the mouth, reminiscent of a Dry Jack with a beautiful orange-the-fruit orange color. Worked well a chardonnay, and almost as well with a robust Zinfandel. I'd nibble it, rather that putting it with bread or wafer.
It does not get any better than this……
I have served it on little pieces of bread any guest have asked me what type of cheese it is!!!
