Chabichou D'Antan
A classic Loire-valley lactic goat cheese, Chabichou has origins with the Arab communities who settled with their goat herds in the region centuries ago. The rind is decorated with distinctive geotricum mould, and the paste is lactic and ranging from chalky to smooth and creamy depending on its level of maturity. The flavor is fresh, lactic and slightly citrusy with a hint of classic goat flavor.
