The Ossau Fermier is wonderful and has a kind of toasted nut, lightly gamey, with grassy notes. Firm and rich.

For my birthday we found Capella and they shipped, so I bought the Smokey Blue, the 1-year cheddar, the compte, the rocket robiola and the gruyere and they were all amazing, but the smokey blue took the cake.
