According to the archives of the world-famous St. Gallen Abbey Library, the friars were producing cheese according to strict guidelines and a stringent purity requirement already set in place in 1565. Hardeggers Gallus Grand Cru was even selected as the best semi-hard cheese in the world at the World Cheese Championship in Madison, USA at the beginning of March 2020!
