Hot Chorizo - Palacios

I was so excited when the cheese arrived and it was simply delicious. I used to get only the small ready packages, but wanted to curl it myself and ordered this one. It was actually delayed during transit (no fault to store) and arrived warm, but after chilling it overnight it was restored and came out perfect and delicious. With the right curling tool this cheese is heavenly divine.

I used your cheese to stuff Medjool dates with Marcona almonds. They were wrapped in bacon and roasted. Before serving, I drizzled them with a syrup of apple cider etc, then sprinkled them with chopped marcona almonds. They were a huge hit and folks asked for the recipe. The cheese was fresh and delicious. Shipping was speedy and kept the cheese fresh. Thank you Cheese Man. I could not get the Valdèon nearby. Working with you was a seamless process. I will be a regular shopper.

Abbaye de Belloc may turn out to be my favorite tasty bite Cheese ever. It's richness and depth of Flavor is truly remarkable. Now that apple season is here in Georgia, the best plate includes a few slices of Mitsu and a chunk of Abbaye-Perfection!. Thank you Raymond, and of course all the varieties in my recent order we will relish with the Gusto that the approaching Fall Season deserves.

Comte is one of my favorite cheeses so I was interested in trying the collection. The 36 month & the 48 month samples were more like eating Parmigiano Reggiano rather than Comte and one taste was it for those two. I most enjoyed the 24 month cheese, it was a real hit for me. Next favorite was the 7 months cheese. The 14 month cheese was OK, but nothing to write home about. I knew there were different Comtes and always thought it was the location where it was aged, but now realize it was actually the age of the cheese that made the difference. I will now look for the 24 month cheese when I buy it or the 7 month cheese if unable to find the 24 month one. Would recommend this collection tasting as a good way to find your favorite Comte.

This cheese is amazing. The flavor is creamy, sweet, savory, nutty all at the same time. This is going to be my "go to" cheese. It's hard to stop eating it. Needs to be taken out of frig an hour before using to get the full amazing flavor. Will definitely buy again.

We like the great variety of great European cheeses and we have been a fan of Abbaye de Belloc cheese for many years. Elegant and smooth. Shipment was fast and packaging was safe. Products arrived as expected.

This was a selection of 5 different ages of Comte cheese which we first tasted in Strasbourg, France. It was fun to taste the differences along with a glass of wine!

This is the perfect complement to a robust Italian red like a Brunello di Montalcino. Great richness, earthy like a cured black olive and faintly grassy.

Last week I placed an order of cheeses, crackers, sausage, and Jelly. It was sent to our friends as a special gift. I was surprised and disappointed when Capella sent me an e-mail stating I would be getting a refund for crackers. I wish I would have known Capella didn’t have the crackers before I placed the order.
