The Valley of Los Pedroches, northen Cordoba, boast the largest extension of centuries-old oak trees, provides the acorns for the iberico pigs, and thousands of acres for them to live in freedom and roam.
The Breed
Acorn fed 100% Iberico pork comes from purebred Iberico pigs, a unique breed known for its natural marbling. This intramuscular fat gives the meat exceptional tenderness and juiciness, setting it apart from most other pork breeds used for cured products.
The Diet
“Bellota” refers to the acorns these pigs eat during the finishing stage. Raised free range, Iberico pigs roam oak pastures and naturally fatten on acorns, which gives the meat a subtle nutty sweetness and rich flavor that cannot be replicated with grain-fed pork.
The Lifestyle
Iberico pigs are allowed to move freely, which develops well-textured meat with evenly distributed fat, creating a unique melt-in-your-mouth texture.
