Very good, strong cheddar flavor which is delicious. I am used to less expensive cheese but this is very high quality and tastes great!
This cheese has a well balanced amount of salt, and exquisite taste. Perfect to pair with wine or just slice it to enjoy as a flavorful snack.

The Ossau Fermier is wonderful and has a kind of toasted nut, lightly gamey, with grassy notes. Firm and rich.

We used to frequent a cheese shop when we lived up North and had a lot of different cheeses over the years but since we moved down to Georgia, we hadn't found a place for good cheese. For my birthday we found Capella and they shipped, so I bought the Smokey Blue, the 1-year cheddar, the compte, the rocket robiola and the gruyere and they were all amazing, but the smokey blue took the cake. It was rich, flavorful and melted in your mouth. Definitely purchasing again!
