Made with organic black garlic that’s grown on the biodynamic farm by the Parra family in La Mancha, Spain and aged under specialized conditions. The garlic adds a sweet dark caramel flavor with subtle umami notes. Pairs well with Parra Family Oveja Negra Manchego, flavored salami, and tinned seafood.
This is the perfect complement to a robust Italian red like a Brunello di Montalcino. Great richness, earthy like a cured black olive and faintly grassy.
Last week I placed an order of cheeses, crackers, sausage, and Jelly. It was sent to our friends as a special gift. I was surprised and disappointed when Capella sent me an e-mail stating I would be getting a refund for crackers. I wish I would have known Capella didn’t have the crackers before I placed the order.

From our first bite of this cheese, we were hooked. It has a complexity of taste, never before experienced. That initial reaction was at a fine dining restaurant in Virginia. When I gushed to the waiter, I was thrilled to find out it was a Georgia product. That made the cheese taste even better, if that was possible. Thanks for creating such a delicious product. It has inspired us to drive five hours down to Thomasville from Jasper to visit Capella Cheese in person. Now that's commitment!
Very good, strong cheddar flavor which is delicious. I am used to less expensive cheese but this is very high quality and tastes great!

The Ossau Fermier is wonderful and has a kind of toasted nut, lightly gamey, with grassy notes. Firm and rich.
