Sud Crusco peppers (produced by Azienda Agricola SUD) are traditional, non-spicy sweet peppers (Peperone di Senise IGP) from Basilicata, Italy. Harvested, dried into garlands, and flash-fried in olive oil, they turn crispy like a vegetable chip with a sweet, smoky flavor. Sweet Capsicum annuum (Senise variety) with zero heat. Thin-skinned and low in moisture, turning light, brittle, and crunchy. Cultivated near Pollino National Park in Basilicata, Italy, with official IGP status since 1996.
They can then be enjoyed as a delicious and crunchy side dish, to season pasta or bruschetta, with potatoes, and are excellent paired with cod. They have a distinctive flavor and remain crunchy even after cooking, so much so that it becomes difficult to stop eating them.
